Peanut Butter Oat Energy Bites

I'll be honest, I'm a big fan of blogs that don't make me scroll through their entire life story just to get to the recipe I want to try. So, just let me say this.
  • These little bundles of joy are delicious. 
  • The only problem is that I want to eat the entire batch in one sitting. 
  • I'm secretly annoyed that my husband is eating them because I want them all for myself.
  • If you get sweet tooth cravings for cookies at 1pm or stand over the jar eating peanut butter late at night, you should give these Peanut Butter Oat Energy Bites a shot as a replacement! 

Ingredients

  • 1 cup oats
  • ⅔ cup unsweetened coconut flakes 
  • ½ cup natural peanut butter 
  • ½ cup ground flaxseed
  • 1 tablespoon chia seeds
  • ⅓ cup honey
  • ⅓ cup chocolate vegan Shakeology powder (you could replace this with another supplement powder, but no guarantees on taste)
  • 1 teaspoon vanilla extract
  • Optional: extra coconut flakes to roll bites in after

Instructions

  1. Add all ingredients to a mixing bowl; stir well to combine. 
  2. Place the bowl in the fridge and let the "dough" chill for approximately 30 minutes. 
  3. After the chilling time, take a tablespoon of mixture and roll into a ball in your hands. Optional: roll the ball in coconut flakes to cover the outside surface.
  4. Repeat with remaining oat mixture. If the bites do not stick well together, you can add a bit more honey or peanut butter, stir well, and try rolling again.
  5. Store in an airtight container in the fridge for up to 2 weeks.

If you're like me, you might want to hide these from your husband and children! But you don't have to stress about them eating them either - they're packed with goodness and totally satisfy the sweet cravings!
