Wanna know a secret? I'd never had cornbread until I met my husband and the first cornbread I ever had ... was cornbread I made. I thought it was a pretty boring bread, to be honest and I couldn't understand why he was so into it. Like, yeah, it's a pretty good side for chili but nothing to write home about.
That is, until you had cheese and jalapeños. Those 2 foods can take any recipe to the next level.
So, I took our cornbread recipe and I adapted it. I used medium cheddar when I made these last week but some jalapeño cheddar or habanero Monterey jack? Girl, I don't believe in cheese rules; follow your cheese-loving heart.
